As Mother's Day approaches, we want to share this delicious recipe, perfect for spoiling your mom on her special day...
This recipe yields a single Swiss roll, perfect for serving 8 guests. It requires just 20 minutes of preparation and another 20 minutes in the oven at 160 degrees Celsius.
Ingredients:
4 egg whites
300g caster sugar
10ml lemon juice
15ml corn flour
1x 250ml cream
Seasonal fruits
Instructions:
Preheat your oven to 160 degrees Celsius.
Line a baking tray (25 x 30) with parchment paper.
In a mixing bowl, whisk the egg whites until they form soft peaks.
Gradually add the caster sugar while continuing to whisk until the mixture becomes glossy.
Fold in the corn flour and lemon juice.
Spread the mixture evenly onto the prepared baking tray. Bake for 20 minutes, then allow it to cool completely (I usually do this a few hours before serving).
Once cooled, sprinkle caster sugar over the meringue. Place another piece of parchment paper on top and invert a baking tray over it. Carefully flip it.
Remove the parchment paper from the baked meringue. Whip the cream until stiff peaks form and spread it over the meringue.
Arrange sliced fruits of your choice (nuts are also a tasty option) on top, then use the parchment paper to gently roll up the Swiss roll.
Place the roll seam-side down on a serving platter. Feel free to decorate it with additional fruits or edible flowers.
For optimal flavor, allow it to rest for a bit before serving.
