WINEMAKER’S COMMENTS

This is an exciting and lively dry sparkling wine expressing flavours of fresh citrus and orange blossom. The palate reveals green apple flavours and is full-bodied with a good balancing acidity and finishes with a lingering, yeasty aftertaste.


DESCRIPTION

VITICULTURE

The Chardonnay vines were planted in 2004 and 2013 on slopes facing southeast and west in lime rich red Karoo soil.

WINEMAKING

The grapes were machine harvested at night between 22 and 24°B. In the cellar, only the free-run juice was used and allowed to cold-settle for two days. The clean juice was then racked and taken to fermentation tanks where specially cultivated wine yeast was inoculated and the fermentation temperature controlled between 15 and 17 °C. After fermentation, which took 14 days, the wine was racked and left on the fine lees for four months.
